Got to admit Turkey is great that way, I also like it cut into strips covered in BBQ suace and charcoaled.

My host's wife in Missouri does it similar to the first recipe.
Cut the breast into 3/8 inch thick strips across the grain. Pound out sufficiently with a meat hammer to slightly break down and tenderize. Dip strips in a mixture of egg and milk and roll in cracker crumbs. Fry in electric frying pan with peanut oil.
Absolutely the best you'll ever eat. You can cut it with a fork and it melts in your mouth. Goes especially well with fresh morels! Deep frying a turkey whole, although delicious, doesn't even count at this point.

Agreed. It's amazing how good wild turkey tastes off the grill...
The last bird I killed I ended up marinading and seasoning with cajun; it was also very very good.

I haven't tried this yet but my girlfriend's Mom smothers it in Mayonnaise, Injects it with different seasonings and cooks it in the oven. She tells me that it comes out so juicy and tender I wouldn't believe it...I just can't get past the mayo..
